Balsamic Vinegar of Modena is made from the typical Lambrusco and Trebbiano grapes of Modena. P.G.I (aka) a Protected Geographical Indication let's you know the vinegar is legit from Modena and the vinegar must mature for at least 60 days in tanks or in barrels, and must be present on the label. It's the good stuff!
