Have you wanted to explore fermentation but been a bit too weary to give it a go? Fear no more! In this class, we will be exploring the basics of lacto-fermentation - the perfect place to begin a foray into the fermented. You will learn how to make kraut: the classic fermented vegetable accoutrement whose usefulness knows no bounds. We will be providing you with gorgeous local produce and jars. You will leave this class with two jars of fermenting veggies, some new knife skills, and the confidence to bring the practice of fermenting vegetables into your life.
Our very own Joni Davis is leading the class. Joni has always been inspired by the beauty and bounty of Northern California. Born and raised in Sonoma County, she developed a deep appreciation for kitchen magic at a young age. This love of making good things to eat has sustained her throughout her life as an independent musician and kitchen professional. Joni has a bachelor’s in music from Goldsmith’s College, University of London and a Certificate in Baking and Pastry from Santa Rosa Junior College. She has been cooking and baking professionally since 2011, and teaching since 2019. She is currently an associate culinary arts instructor at Santa Rosa Junior College and a kitchen queen and Miracle Plum Kitchen.
