Russell Moore, chef + owner, of the beloved Oakland restaurant Camino (and now The Kebabery soon in Berkeley and currently in Oakland) has been making his own red wine vinegar from drinkable leftover wine for decades. He and a friend were both cooks at Chez Panisse when they bought a small barrel on a lark, began saving odds and ends of wine, and started making vinegar. He stores this brew in small oak barrels, and you can taste the difference in this phenomenal and versatile hand crafted vinegar. Camino may be no more, but you can certainly enjoy a touch of this beloved institution at home.
