This unique flour is designed just for Miracle Plum and for rustic sourdough breads and baked goods, and is blended from 100% locally grown, organic, wheat and features 57.5% Wit Wolkering heirloom white wheat, 40% Hollis hard red wheat developed by the Bread Lab at Washington State University, and 2.5%organic malted barley flour.

Milled in a Partisani Italian stone mill, this flour lightly sifted to +/- T115 equivalent to remove any chaff in the grain, but you should treat it as a whole grain flour. 

The malted barley acts as a dough conditioner, adding enzymes that help break down sugars and starch into simpler sugars that promote vigorous fermentation.
