Chef Abel Alvarez, self proclaimed lover of tinned fish, started Gueyu Mar to capture and preserve delicious flavors of grilled seafood, and employ the workers of his tiny seasonal restaurant on the northern coast of Spain year-round. 

Squid is gently grilled, and preserved in it's own delicate but flavorful ink.

Ingredients: Squid (Loligo Vulgaris) and ink sauce (squid ink, onion, pepper and fish stock).
