Sorghum is a gluten free ancient grain (first collected over 8000 years ago in Southern Egypt, in a place called Nabta Playa!) with a hearty texture and mild, nutty flavor. You can pop it like popcorn or used in pilafs, salads and anywhere else whole grains are called for. It's an excellent sub for couscous if you're craving a GF version.
