The Alubia Blanca is small, creamy bean that cooks quickly and holds its shape in soups and stews. We mix it with lemon and fresh herbs for our Smoked Trout Salad, but it's also fantastic simmered with garlic and tomato on toast or in any recipe that calls for cannellini or great northern beans!
